Peppakakor & Speculaas Spice Mix

150g butter
150g dark brown sugar
Zest of a lemon or orange
1 tablespoon Speculaas Spice Mix
250g plain flour
1 teaspoon baking powder
Pinch of salt
2 tablespoons of milk
To prepare the dough:
Cream together the butter and sugar with the zest of a lemon or orange
Stir in the Spice Mix, then add the other dry ingredients
Add a the milk, then knead the dough together with your hands.
Wrap the dough in cling film and put into the fridge for at least 30minutes to chill.
To bake:
Preheat the oven to 180c/gas 5
Roll the dough into large marble sized balls and place on a lined baking tray with enough room to spread out and bake for 15minutes.
Remove from the oven and leave to cool down and become crisp before storing in an airtight container.
Speculaas Spice Mix
1 tablespoon ground cinnamon
1 teaspoon ground aniseed
¾ teaspoon white pepper
¾ teaspoon ground ginger
½ teaspoon ground coriander
1 teaspoon ground cardamom
¼ teaspoon ground nutmeg
¼ teaspoon ground cloves
Makes approximately 2 tablespoons. Can be scaled up and makes a wonderful gift presented in a festive jar.
